Alleviating Food Insecurity in the United States: Possible Implications for Canada

Presented by Dr. Craig Gundersen, Department of Agricultural and Consumer Economics, University of Illinois

Food insecurity is one of the leading public health challenges facing the United States today. In this presentation I define food insecurity, describe the magnitude of the problem, and consider the determinants and consequences of food insecurity. I then present some initiatives that have been proven effective in alleviating food insecurity. In Canada, food insecurity and its associated consequences have been receiving more attention in the last decade; I therefore conclude this presentation with thoughts on how the research findings in the U.S. may be relevant for Canada.
